A doodle without the snick

Adapting Betty Crocker Snickerdoodles.

NOW...........A doodle without the snick.

This yummy cinnamon delight, is now a sugar cookie.  But still delicious!
Egg free, dairy free, peanut free, corn free, soy free, and gluten free version below. (and no cinnamon)

  • 1 cup sugar
  • 3/4 cup sunflower oil (check labels as not all are peanut free) OR 1 cup spectrum
  • 1/4 cup applesauce (we need to avoid citric acid and ascorbic acid)
  • 1 tsp vanilla (See vanilla note below)
  • 2 and 3/4 cup of flour*
  • 2 tbsp baking powder (see baking powder note below)
  • Shake of salt
  • small bowl of sugar (1/2 cup should do it)
Roll small balls of dough and then toss the balls in sugar.  Place on ungreased cookie sheet.
Cook@ 350 for 8-10 minutes.




*To avoid gluten I use the following ratio:
 1/3 ground almond, 1/3 sweet rice flour, 1/3 white rice flour

Note:  We make our own vanilla.  Even the fancy organic store vanilla that says organic has corn syrup in it.  They don't have to list it on the label.  GO to their website and look.  To make your own, order/find organic vanilla beans (Amazon has some).  We have had good luck with Lukasawa potato vodka. Insert beans in  vodka bottle and wait about 6 weeks. It will be quite yummy!

Note:  Most baking powders have corn.  Hain does not, so we use this brand.
